Could someone tell me what the normal operating/working pressure should be, on an older (1984) 318 hydraulic system ?

Hi John - Here's what I found in the tech manual:

Charge Pump Pressure is 620—1,240 kPa (90—180 psi)

Implement Relief Valve Pressure is 5,861—6,722 kPa (850—975 psi)

Charge Pump Flow at 3,450 kPa (500 psi) is 11 L/min (3 gpm)
